Let me be upfront—when I think of amazing pizza or freshly baked bread, Childress, Texas, isn’t the first place that comes to mind. Let’s be honest—this small city, just 45 minutes from the Oklahoma border with a population of around 5,800, doesn’t exactly scream “culinary destination.” You might expect to find great BBQ or Tex-Mex, but pizza? Probably not. However, if you’re passing through and your stomach starts to rumble, you’d be making a huge mistake by not stopping for a bite. And if, like my wife and me, you love pizza, there’s one spot you absolutely have to try—Wheat’s Artisan Bakery.

Officially known as Wheat’s Artisan Bakery, this hidden gem is just a block off Highway 287, nestled behind the Childress County Courthouse. The moment you walk in, you’re enveloped by the irresistible aroma of freshly baked bread and pastries, setting the stage for a delightful culinary experience. The interior is cozy and inviting, blending rustic charm with modern elegance. It’s the kind of place that makes you want to sit down, unwind, and savor every moment, whether you’re grabbing a quick snack or enjoying a leisurely morning.

Wheat’s menu is carefully crafted, offering a variety of baked goods that balance classic and inventive flavors. From flaky croissants to hearty sourdough loaves, each item is made with top-notch ingredients and a commitment to traditional baking techniques. The almond croissant is a standout—rich, buttery, and filled with just the right amount of almond paste. It’s clear that the bakers at Wheat’s pour their heart into their work, as every bite reflects their dedication and passion.

One of Wheat’s strengths is its ability to cater to a wide range of tastes and dietary preferences. Whether you’re craving something sweet or savory, there’s something for everyone. The quiches are particularly impressive, with a perfectly crisp crust and a creamy, flavorful filling that changes daily. And if you have a sweet tooth, don’t miss the cinnamon rolls—soft, gooey, and generously topped with cream cheese icing. Pair any of these treats with a cup of their freshly brewed coffee, and you’ve got a truly satisfying experience.

The service at Wheat’s Artisan Bakery is another highlight. The staff is friendly and attentive, making you feel more like a valued guest than just another customer. They’re knowledgeable about the menu and happy to offer recommendations if you’re unsure what to try. This personal touch sets Wheat’s apart from larger, more impersonal establishments, making it a favorite among both locals and travelers.

In addition to their baked goods, Wheat’s also serves a selection of sandwiches and soups, making it a great spot for a light lunch. The turkey and brie sandwich, served on their signature house-made bread, is a perfect balance of flavors, with creamy brie complementing savory turkey and a hint of cranberry sauce adding a delightful twist. The soups are hearty and comforting, made with fresh, seasonal ingredients that reflect the care and attention to detail that defines the entire menu.

Bottom line, Wheat’s Artisan Bakery is a sweet little spot in a sweet little Texas town. Although my wife and I have driven through Childress many times, Wheat’s is now a “must-stop” for phenomenal pizza and a jolt of caffeine to keep us going. This place is one of the few spots open during the Thanksgiving holidays, offering coffee and breakfast options when almost everything else is closed. From the moment you walk through the door, you’re greeted by the warm, sweet smell of freshly baked pastries and the warm, welcoming smile of the owner. She’s kind, hospitable, and genuinely caring. This is the kind of small business we should all support and celebrate. So, the next time you’re passing through Childress, do yourself a favor—stop by Wheat’s and make your day a little brighter.
