Most Amazing Sausage wrap from City Market in Schulenburg, TX

Schulenberg is a small town, with a population of around 2,900 residents, embodies the essence of Texan hospitality and warmth. Founded in 1873, Schulenburg has deep roots in agriculture, particularly in cotton and cattle. Over the years, it has evolved into a diverse community with a mix of cultural influences, including German, Czech, and Polish heritage. This cultural tapestry is evident in the town's architecture, cuisine, and festivals. And speaking of cattle - when it comes to meat and and a phenomenal sausage wrap, this city has the best place in all of Texas. Yes - in all of Texas.


Now, the makings of a sausage wrap are simple, which is why any barbecue joint can make one, whether it’s on the menu or not. It starts with a link of smoked sausage and a slice of white bread, basically an open-faced sausage sandwich. There are exceptions; the base can sometimes be a hot dog bun or a tortilla. While I love a good tortilla, the ones you get at most joints are the stale and dry grocery-store variety. A predictable slice of cheap white bread is a safer bet. Hot dog buns are also a nice option. There are even a couple joints on the list below that use Texas toast or hamburger buns, but a single slice of white bread is most common. Personally, I prefer the sausage to be laid on the diagonal. But the best sausage wrap imaginable is at a little spot in Schulenburg named 'City Market.'

In 1944, a man named Rudy Smrkovsky, and 'Uncle Tony Smrkovsky' purchased City Meat Market in when it was located in downtown Schulenburg, Texas.  Prior to City Market the building was a saloon -swinging doors in front, like Kitty had on the TV show Gunsmoke.  In 1996, they made the decision to share their products with everyone and built an inspection plant and later expanded in 1999 to better serve thousands of customers.  Today they produce 10,000 pounds of sausage per week and cook a lot of Bar-B-Que on Saturday.  Every Saturday they serve Bar-B-Que Brisket, Bar-B-Que Pork Shoulder, Bar-B-Que Pork Ribs, Bar-B-Que Turkey Breast, Bar-B-Que Sirloin, Bar-B-Que Chicken and Bar-B-Que Sausage.

Their full-service meat market will gladly cut your favorite meats to ideal specifications while providing quality cuts of beef, pork, and poultry fresh daily. In addition to fresh meats, they also offer a variety of smoked meats including summer sausage (available in jalapeño and regular), pork sausage, dried sausage, and smoked sausage.


I found this place by stopping here for a quick bite for lunch on the way home and I were so pleasantly surprised! I had been in search of great dry rub BBQ for a long time and have only found OK BBQ until we came here. I ordered the chopped beef sandwich and agreed that the dry rub adds just the right amount of spice and the smoke taste is great without being too much. When I drove away, I said 'This meat market itself really makes this place worth the visit!'

About 6 months later, I was back in town and ordered a Sausage wrap. Let me just say this - I ordered two more and took two more home. Yes, I purchased 5 of them.


Let me just say this - This is an amazing, really quality) meat market with very good quality meats, bacon, smoked sausage, and yes, home smoke brisket...some of the finest quality beef and smoking around. Amazing pit smoking, beautiful pepper crusts, moist and delicious meat and smoke ring and fat that just melts when it is being sliced out of the pit. Don't be fooled by the mediocre sub par tourist attraction called Oak Ridge smokehouse on the other side of the highway. Turn the other way. Yes, you have to turn off the highway for a minute. It beats every other bbq between San Antonio and Houston. But you have to go on SATURDAY AM when they have the brisket in the pit. It's the only day of the week. And all those places on the highway advertise with big signs and aren't worth a hill of beans. This place is the kind of spot that you have to look for it. But you will not be disappointed especially if you can get some great sliced beef on Sat. It's best to note that this is not a "BBQ joint" as you might expect. It is a meat market, but they do have good sides and you will always see locals stopping by to eat lunch and chat.
