Incredible BBQ in Lexington, TX: Snow’s BBQ

I could not wait to write this posting to you because yesterday, Saturday, was an extraordinary experience. I went to Lexington, Texas for a long drive and memorable day. If you've never heard of Lexington, it is a small town in Lee County, Texas, United States. It's a 'cattle trading town,' located about 40 miles west of the city of Bryan. The way the crow flies, it's about 30 miles outside of Austin. It's a small town. Nice place. Not too much going on...unless you're talking about BBQ. And when it comes to incredible BBQ, Lexington is the place to be. If you ever get the opportunity to stop into this tiny town, do not miss the biggest foodie attraction for 40 miles - Snows BBQ.
I want to be clear - this is the kind place that people wake up at 2 AM, get dressed, and drive throughout the night to stand in line, at 4 AM for a single meal. No...I'm not kidding. In fact, that's exactly what we did.

A coworker had told me about his recent trip to Snow's BBQ... getting in line at 7:45am... waiting four hours to eat, hoping there would be meat left by the time they got to the front of the line. It sounded...well... pretty miserable to be honest! My response: "I'm not waiting in line four hours for ANY food, not even BBQ!"
Well, I did it...and it was worth it.
For as long as I can remember, I have loved Texas BBQ - in particular, brisket and sausage. Both were really great, especially the brisket. We also enjoyed the perfectly smoked ribs. But the pork shoulder steak stood out most for me. That's not something I normally associate with TX BBQ but it was quite impressive (and absolutely perfectly seasoned). That shoulder, as well as the brisket and ribs, were flawless.
Considering the number of people and amount of work that early in the morning, every staff member we encountered was extra friendly. The food, as expected, did not disappoint. I was surprised to find that my top two meats were the pork ribs and chicken though the jalapeño cheese sausage was equally as great with brisket being just a little behind those. Overall though no complaints about any of the meats. We didn't get any sides because...more room for meat...but did get the delicious banana pudding.

Five key things to know if you're coming to Snow's BBQ:
Only open on Saturdays. Got to get there early and expect to wait awhile in line.
There is a Netflix show about this place. There is plenty of word of mouth recommendations and online reviews. I'm usually skeptical when something has this much hype. But after trying all the dishes except the chicken(they ran out), every single one beat my expectations like a drum and a rock concert.
Parking is kind of anywhere that makes sense. It's a small town, so use common sense and be considerate. We were able to eat at tables there with no problems.
I recommend you bring a lawn chair and grab a beer from the bar outside (complementary). Clean bathrooms too!
They do a great job of packaging the order. They also provide reheating instructions (just follow the instructions- it will turn out perfect). Highly recommend ordering and you want to order early as it tend to be sold out for good reason.
This is a bucket list place, folks. Seriously.
