Vietnamese cuisine is renowned for its vibrant and fresh flavors, characterized by a harmonious balance of sweet, sour, salty, and spicy tastes. Prominently featuring herbs and vegetables, Vietnamese dishes are often garnished with fresh basil, mint, cilantro, and lime. Signature dishes like pho, a fragrant noodle soup, and banh mi, a crispy baguette sandwich filled with savory meats and pickled vegetables, highlight the country's French colonial influence. Another staple, rice paper rolls, offer a refreshing and healthy option, packed with shrimp, pork, and fresh herbs. Vietnamese cuisine's diverse flavors and textures create an unforgettable culinary experience.
Throughout Texas, Vietnamese cuisine is growing in popularity. When Japanese cuisine, especially ramen, used to dominate the ‘hip scene,’ it is now turning increasingly towards Vietnamese flavors. One undeniable staple of Viet-Texan interest is the Bún Bò Huế.

If you’re unfamiliar with Bún Bò Huế, it is a traditional Vietnamese soup originating from the city of Huế in central Vietnam. Known for its rich, spicy broth made from beef bones, lemongrass, and fermented shrimp paste, it boasts a distinctive and robust flavor. The soup typically contains slices of tender beef shank, oxtail, and pork knuckles, along with thick, round rice noodles. It is often garnished with fresh herbs such as cilantro and scallions, and served with a side of bean sprouts, lime wedges, and chili sauce, allowing diners to customize their bowl to their taste. Bún Bò Huế is celebrated for its complex and aromatic profile, making it a beloved dish in Vietnamese cuisine.
If you’re near Houston, there’s one spot that opened not too long ago that is being praised for their Bún Bò Huế. After visiting this spot four times in the past year, I can verify the rave reviews—Bún Bò Huế Cô Dô 2. The moment you enter the restaurant, the aroma of lemongrass kicks in and welcomes your hunger. My first meal, a pho, came out filled with meats, lemongrass, and blood pork cubes. The broth was so flavorful that it begged me to slurp it all. My hubby and I enjoyed this magnificent pho so much that we ordered several more to go.

On my second visit, I ordered the highly acclaimed Bún Bò Huế. Let me tell you, it was amazing. From the moment the bowl was placed before me, I was captivated by the aromatic symphony of lemongrass, chili, and rich beef broth. Each spoonful was a harmonious blend of savory, spicy, and umami flavors that danced on my palate. The tender slices of beef shank and succulent pork knuckles were cooked to perfection, melting effortlessly in my mouth. The thick, round rice noodles provided the perfect texture, soaking up the flavorful broth with every bite. Fresh herbs, bean sprouts, and a generous squeeze of lime added a refreshing contrast, elevating the dish to new heights. The balance of flavors and textures in this Bún Bò Huế was truly unparalleled, making it an unforgettable culinary experience that I can't wait to savor again.

After having it twice, I can say their Bún Bò Huế is fairly good, actually better than most other Vietnamese places around town. The broth is surprisingly rich and spicy enough to appreciate. You can smell and identify the beef bones, essence of lemongrass, and shrimp paste. This spot, without question, gave it a unique and robust flavor that you remember and makes you want to return. The soup usually includes slices of tender beef shank, oxtail, and pork knuckles, accompanied by thick, round rice noodles. It is often topped with fresh herbs like cilantro and scallions, and served with a side of bean sprouts, lime wedges, and chili sauce, allowing diners to personalize their bowl to their liking. When I looked around, nearly everyone next to me was devouring the Bún Bò Huế, clearly celebrated for its popularity and flavor. When it comes to the service, you can expect a wait if you come during lunchtime. They were very organized but super busy with who was getting a table since there isn't a hostess (this is normal for an Asian place, honestly, so I wasn't surprised), but still worth the wait. Other than this, our waiter was very polite and helpful. No complaints at all—they are simply swamped with business. The atmosphere itself is relatively clean, but they were in a rush to clean tables, so there was still some watery residue on our table. Again, they are swamped. It's not a big deal since I knew they were super busy at the time. Also, expect the restaurant to be hot. Honestly, if an Asian place doesn't feel hot when you're eating their food, then it's probably not going to be good, LOL.

My hubby said, "Finally, I found a Bún Bò Huế heaven spot." It's been a while since I have had that loving feeling of Bún Bò Huế again. This place is amazing, and it's a blessing to find it. I have to agree with him. When you’re in Northwest Houston, this place is a must for anyone who enjoys a fantastic Bún Bò Huế at a great value.
