Border Foundry’s history dates back to 1907, a time when promises were steadfast and handshakes held significant value. Constantine Mims established the foundry in Laredo, and for generations, the Mims family became known for their exceptional metal casting, steel fabrication, and strong relationships across the Rio Grande. The relentless heat, sweat, and resonant sound of hammers on anvils cultivated qualities such as a strong work ethic, innovation, and pride in their work. These virtues, coupled with a passion for cooking, have been integral to Pete Mims' vision for the modern Border Foundry.
Today, Border Foundry is an upscale American restaurant, offering an eclectic menu inspired by diverse culinary traditions from Mexico, Thailand, and New Orleans.

Notable appetizers include pork belly grilled cheese sliders, which are so delightful that sharing becomes a challenge. Among the entrées, the grilled sea bass stands out, combining sweet pineapple with savory miso, accompanied by creamy black rice risotto and grilled bok choy. Another highlight is the duck confit enmoladas, served with a rich Oaxacan mole and topped with sweet potato shoestrings. The brick-oven pizza, a la parillada style, features ribeye, onions, avocado, queso blanco, and a cilantro crema, complemented by an impressive drinks menu.

During my first visit, I was impressed by the diverse and inventive menu. Starting with sangria and a watermelon martini, I moved on to the foundry shrimp, which were outstanding. For the main course, the lamb chops, though good, were not as tender as expected, but the huitlacoche sirloin was exceptional, with perfectly tender and flavorful meat. The mushroom risotto side dish was an excellent complement to the meal, adding a rich and earthy dimension.

On my second visit, celebrating my sister-in-law's birthday, the atmosphere was filled with joy and romance. We enjoyed the Thai Belly Skewers, which were perfectly cooked and balanced in flavor, and the Pear & Fennel salad, enhanced by caramelized pecans. The Double Bone-In Pork Chops, glazed with Chile Guajillo and honey, and served with gnocchi and pesto, were delightful. Although the Pizza Parrillada felt a bit dry, the overall flavors were still enjoyable. Despite the high prices, the quality and experience were worth it, making it a great spot for romantic dinners.

During my most recent visit, I was convinced that Border Foundry offers the best dining experience in Laredo. The service was impeccable, with our server providing detailed descriptions of each dish. The Quail Lollipops were magnificent, and the Herb Crusted Salmon my date ordered was extraordinary, with a sauce that elevated the flavors. My Tomahawk Steak, ordered medium rare, was juicy, tender, and perfectly flavored. The cream of corn, spiced with chipotle, was a delightful addition, making this dining experience truly exceptional.

Consistently, Border Foundry delivers excellent service and exceptional food. Every visit reaffirms its status as a top dining destination, whether for a date night or a special family outing. Although I miss the bisque and bread pudding, which were personal favorites, the current menu offerings never fail to impress. I highly recommend this restaurant for anyone looking to enjoy a memorable meal in Laredo.
