In case you don't know, Kimchi is a staple in Korean cuisine. Kimchi has become popular even to non-Koreans because of the Korean diaspora and the emergence of Korean restaurants all over the world, introducing Korean cuisine – kimchi, specifically – to a global audience. But what is kimchi? It is the national dish of both South Korea and North Korea. Kimchi is a traditional Korean side dish. It is made of salted and fermented vegetables. Napa cabbage and Korean radish are commonly used in making traditional kimchi. I'll be the first one to tell you that it took me some time to get used to it (especially the unusualk smell)...but when I got over that, I became a true fan.

And if you are ever in north Houston (specifically Cypress), there's one spot that has the best kimchi I've ever tasted - Chimac.

Chimac is located in Jones Plaza, off of Cypress Creek Parkway. You'll find it near Michocana (Mexican Meat Market) and the Fitness Connection. Chimac defines itself as 'Classic American meets Asian fusion! Inspired by Tennessee-Atlanta hot wings, Seattle Teriyaki, and NYC KBBQ. Also, seafood wing combo to fill your cravings.' In my humble opinion, this place is a 'must visit' for Kimchi lovers.

For months, I've been driving past Chimac, always seeing it but not knowing nothing about it at all. I just figured that it was just a random fried chicken dive I'd never want to experience. But recently, at work, a co-worker gave it some positive buzz and showed me her orders that she took with her phone. I was shocked, yet delighted to see the pictures and videos of Chimac's food. So, I decided to pay it a visit the next time I was in the general area.

During my very first visit, I ordered the 'Jerk chicken bowl' and the kimchi; simply amazing. To be honest, the fried rice is skippable (seemed like ours was just rice and peas) but I said to myself - "Not only is this an affordable place with really good food, but I will definitely be exploring more of the menu on my next visit.

On the second visit, I ordered just the kimchi. I wanted to experience it all by itself - delicious...and full of flavor (just like the first time).

On the third visit, I ordered the Spicy Pork bowl...and the Kimchi Fries. Yes, I stated that correctly - Kimchi fries. While the bowl was really good, I felt that I could have used more pork and be a bit spicier, I actually enjoyed the kimchi fries. So then, I ordered kimchi to go. It was nice and sour and the fries were perfectly crispy. It was a very satisfying to-go meal. And if you enjoy kimchi itself, I have fallen in love with their kimchi Fries. They came out so hot, and there was a perfect topping to fries ratio. This is an absolute must try when you are here.

On my fourth and final visit (so far), I ordered the Korean Fried Chicken Tenders with KBBQ sauce. Fantastic! According to Chimac's manager, their store is the only one in the greater Houston district and that's a shame. This place would do great in the heart of Houston and Dallas.

Overall, t is fantastic. I will definitely go back again and again when I'm in the area. The food is wonderful and the service is great! Give them a try!
