Best Chili in Austin: Texas Chili Parlor

Everyone knows about (and loves) chili and the tall buildings really turn Austin into a wind tunnel on some days. And when it's windy and 'chilly' I duck into the Texas Chili Parlor. Now when it comes to chili, I am an 'addict.'


Great chili is a culinary masterpiece that embodies a harmonious blend of flavors and textures, warming both the palate and the soul with its hearty goodness. At its core, a perfect chili boasts a rich, robust base of tender meat—whether beef, turkey, or even vegetarian substitutes—slow-cooked to perfection alongside a medley of aromatic spices like chili powder, cumin, and paprika, which infuse the dish with depth and complexity. Diced tomatoes provide a luscious backdrop of acidity, while onions, garlic, and bell peppers add layers of savory sweetness. The judicious addition of beans—whether kidney, black, or pinto—provides a creamy consistency and a satisfying bite. Whether enjoyed on its own or ladled generously over rice or cornbread, great chili is a culinary marvel that transcends seasons, bringing comfort and warmth to any table.

Austin Chili Parlor stands as an iconic institution, revered for its legendary chili creations and unwavering commitment to authenticity. Stepping into this humble yet bustling establishment, one is immediately greeted by the tantalizing aroma of simmering spices and slow-cooked meats, enveloping patrons in a warm embrace of comfort and nostalgia. Renowned for its no-frills approach, the Austin Chili Parlor focuses on the essentials, crafting each batch of chili with meticulous care and attention to detail. Whether opting for the classic beef chili or venturing into more adventurous territory with options like venison or even wild boar, diners are treated to a symphony of flavors that dance across the taste buds with each spoonful.

There's a robust selection of chili here, with an impressive vegetable option as well. they even offer a 3 chili sampler. Their chili mac? Amazing with great good chips and queso. The salsa is slightly sweet with a creeping, lingering heat that is worth trying. I loved it!


I ordered more to go. While sitting at home, the salsa was hot, yet flavorful. I also ordered a chili sampler to go, but my favorite was by far the medium meat chili. The venison chili was good as well, I can't remember the name of the third, but it was also flavorful and tasty. I paid $1 extra for each sour cream and cheese on the side, but it was not needed.


And during my last two visits, my sister-in law and I stopped in for lunch and joined a couple of other folks at the bar. The bartender was fun and friendly, and took great care of us. I got the Habanero Chili, and my wife got the Sausage and Beef with Black Bean Chili. Both of them were great! Hers had a lot of meat and was mild; mine had a nice heat, and was delicious! In a rare moment for me, I didn't need to add the side of jalapeños to spice it up.

The atmosphere and service are classic Austin. Huts and catfish parlor are gone, and this place felt like going there. It warmed me up as much as their food to see the vibe still going. It has nothing to prove, and the service, and prices reflect that.  It's 'old school' so be prepared to not be impressed about the ambience. Fast and prompt service. Stopped for drinks and a 'taster' of chili. Very tender meat and authentic Texas chili. It's got a nice casual ambience, like a clean dive bar. It feels like a place made for regulars. The service was excellent, Mt server was very sweet and accommodating. But let me tell you the most important part.


Five quick things to know:

  • For your chili, cheese and onions are optional (just ask when you place your order).

  • Beans or No Beans? Their saying is real Texas chili has no beans, so yes their original chili is bean free. But they do give the option for chili with beans as well.

  • Go to orders are not a problem. Just call (512) 472-2828 and the staff will help.

  • If chili isn't your thing, but you love gumbo, order the order the chicken and sausage gumbo for $9.25. Delicious!

  • If you'd like to order chili to go in large containers, they offer 'a gallon to go' for a little over $60.
