And if you don't know what that is, it's a diverse and flavorful culinary tradition that encompasses a wide range of dishes and ingredients from countries across Latin America and the Caribbean. While each region has its own distinct flavors and specialties, there are some common elements that tie Latin cuisine together. Corn, beans, rice, and various meats such as beef, pork, and chicken are staple ingredients found in many Latin American dishes. Spices and herbs like cilantro, cumin, garlic, and chili peppers are used generously to add depth and heat to dishes. Latin cuisine is also known for its vibrant and colorful presentation, with dishes often featuring a variety of fresh fruits, vegetables, and garnishes.

And when it comes to empanadas, this place is the winner in Amarillo, Texas. And when it comes to their entire menu, Mi Gente has absolutely raised the bar for food trucks...and all food, really. Delicious isn't even a strong enough word. The owners were so nice and the food was the best I've had in a long time.
Two months ago, my husband had the Cuban Sandwich and I had the Carnita Tacos. They were both delicious! We also had their street corn which was out of this world! Chef Paul and his lovely wife, Amber and her sweet aunt were so hospitable and attentive. Their brick and mortar space is so inviting and perfectly clean! It was a great experience all the way around!
Then, last week, I returned yet again and ordered the steak fajita eggroll and street corn. My best friend came with me and she ordered the Asada Tacos and Nutella Empanadas. Everything was served hot, beautiful and tasty to the eyes! Then we ordered their eggrolls which were delicious and quite filling. We enjoyed the meal. We loved the atmosphere, and the service was great, once again. I'll definitely be back because I want another eggroll..now!
